Are milk and dairy foods like yoghurt and cheese unhealthy?
1) UHT (Ultra high temp) pasteurization (if done correctly and packaged accordingly) is shelf stable. HOWEVER upon opening the package it does require refrigeration. 2) Soy and Rice milk are technically not considered dairy products. They are dairy/milk substitutes. 3) I’ve heard many different opinions on what causes cancer… but the thing is no single variable is the cause. I’ve read quite a few different books/articles over this topic and most are either unresolved or have shown that no conclusive evidence exists supporting such a hypothesis. 4) As for your final question of UHT vs HTST (or the LTLT: Low temp, long time) vs powered. It honestly depends on your personal preference as for what’s “better”. Overall though the HTST method has the highest quality of milk compared to UHT. (LTLT is rarely used, it is commonly known as the “Vat pasteurization method”) Overall the quality would be: HTST > UHT > Powdered (accomplished via spray-drying most likely) UHT milk (which is not uncom
