go to the store and compare labels. All pasta, unless otherwise labeled, is made from egg, flour and a liquid or flour, oil and a liquid. Some have salt added. The only difference is the shape. Some are made without yolks or are made with an egg substitute. One of the reasons some seem to taste different is some hold sauces better than others. Also, some are made from semolina wheat which is best for pasta and MIGHT influence taste but I doubt it. Also, different brands could taste different depending on the extra ingredients like preservatives or dough conditioners used in the manufacturing.
