Are Jews allowed to eat the heart and liver of kosher animals?
All the internal organs can be eaten- just certain internal fats cannot be eaten. Kidney, liver, the heart, intestines etc are all Kosher as long as the animal has been killed Kosher. My great Aunt used to love serving kidneys and livers (not chicken ones- but calf ones!)- actually very nice, or maybe thats just because I grew up with it as a kid. Chicken hearts are a frequent dish in many Sephardi restaurants- I tasted them in a Moroccan restaurant in Israel. All of these organs have to be kashered seperately- the heart is actually easy to drain blood from- the chambers are emptied and its tissue does not absorb blood, the difficult one is the liver as its tissues filter the blood and it requires extra care. As a child I remeber my grandmother having to kasher the livers after buying them at the butcher- nowadays the butchers kasher them for you (at least in Johannesburg.
