Rating: 85 Fresh eggs that freeze are safe to use. If the shell is broken, discard egg. Thaw intact eggs gradually in a dish in the refrigerator. These eggs should be used in products that are cooked. If eggs freeze to the extent that the yolk is frozen solid, the texture of the yolk will be gummy and thick. This makes the eggs unsuitable for scrambling or use in baked goods. However, the eggs can be used successfully for hard cooking in the shell.
