An over-abundance of cubanelle peppers! Whats the best way to freeze them?
Roast them: put them under the broiler or on the grill until the skins blacken. Put them in a plastic container, cover them and let them sit for about 15 minutes. Remove the skins and the seeds. Pack in freezer bags, mush all the air out and put them in the freezer. Make sure that you freeze them in portion sizes that are convenient for you. You don’t want to have to hack a great big lump of frozen peppers into manageable chunks!
