Butchers pepper is ground pepper, but a rough grind, compared to a very fine grind. The pieces are uniform, but each peppercorn is split into about 8 grains. It’s smaller than cracked pepper–but larger than finely ground! A medium grind, basically. It’s great on steaks, roast and poulty. You can buy it in bulk at Whole Foods stores.
