What determines the amplitude range?
The difference between the power supply and the bias voltage and the ground and the bias voltage determines the amount of AC voltage the amplifier can swing (amplitude range). When using sensors with 12 volt bias, it is generally recommended that the supply voltage exceed 24 volts to increase the amplitude range performance of the sensor. Multiplying the sensitivity of the sensor by the available voltage swing gives the amplitude range in terms of engineering units (g, ips, etc.).
