What is Chinese food like in Canada?

I am a former chef and the last person from me is correct, the more authentic real Chinese food, I go to Mongolian, Tibetan and all the Chinese regional place here, alot of thing most Canadians and American would not even touch, we have BBQ place with the food in the windows, ducks, chickens, whole pigs, even cuttle fish, and everything has it’s head still attached, I was there this summer and group of Swedish tourist’s were amazed to see it that way, I explained that it the way they buy the meat in the markets in our Chinatown areas, here in Toronto ON we have 4 and the downtown one are the oldest. Now the buffet and other Chinese restaurant around town do carry the usual type and is not bad, I prefer to have the traditional myself.
