What is bulgur
Bulgur is wheat grains that have been steamed, dried and crushed. It can also be spelled bulgur, bulgar, or burghul so you might see it a few different ways. It’s a long popular grain ingredient in the middle east.
According to the Oxford Companion to Food, It is made by parboiling the wheat, drying it,then coarsely grinding it. At that point, the outer layers of the branare removed — traditionally by hand — after which, the grains arecracked. It is generally available in three textures, fine, medium andcoarse, and you can sometimes find organic burghul. After cracking, itis ready for steaming or boiling. The distinctive nutty taste is the result of the inner layers of bran that are retained.
