What is mesclun?

It is a mixture of young, small salad greens which vary but can include dandelion, arugula, frisee, oak leaf, mizuma, radicchio, mache, sorrel and endive. Mesclun should be picked based on the crispness of the leaves, which should show no signs of wilting, and can be refrigerated up to 5 days in a plastic bag. Wash and dry carefully just before using.
