If the engine is off and you pump the brake pedal then the noise you hear is the brake servo unit (booster i think our American cousins call them) equalising with atmospheric and this is completely normal.The brake servo which works on vacuum power assists the brake pedal so the driver doesnt have to push so hard on the brake pedal.The clutch problem you talk about is totally unrelated,if you had air it the clutch hydraulic system then you would have to bleed the system but you would not “hear air” You and your mechanic appear to have crossed wires talking about two separate problems.
