What is all the talk about “Slow Food”?

Our mother was very knowledgeable about nutrition and foods and we continue that in the restaurant. Offering a broad array of vegetables and other foods prepared in a healthy manner. Slow Food originated in Italy in response to the “Fast Food” culture that was invading their country from the US. People have seen a deterioration of eating habits, healthy eating and just plain enjoying food and the company around a table. We are losing flavors and textures as fast food takes over the palette! It is sad when people think that the chain restaurants are preparing a particular dish correctly – both in technique and taste! Do you realize that many dishes in chains are prepared in central kitchens, then frozen/refrigerated and then prepared by dropping in boiling water or in a microwave? It is not from scratch. They may tell you they are adjusting something just for you, but it is doubtful.
