The industry generally agrees that 30-days is a good working number to use. Our tests went to 60+ days, and stopped because it was a good benchmark opportunity for taste testing – not because we anticipated the wine was going to go off on day 63. Some have claimed that gas preserved wines can hold for a year or more! We do not give much credence to that claim, and have not seen any testing in support of it. No manufacturer, including OZ Winebars, can guarantee a preservation window for wines. Some wines are shot before you pull the cork and some have made tolerable advances towards it in the bottle. The 30 days has proven to be a real safe rule of thumb, but you should sample your stock every couple days to be certain.
