This Easter, I’m inviting my family over for Chicken Divan crepes. Here’s the recipe: 1 head broccoli, cut into florets or 1 10-ounce package frozen chopped broccoli, defrosted and drained 3 cups diced, cooked chicken 1 10.75-ounce can Healthy Request cream of chicken soup 1 cup reduced-fat sour cream 1 tablespoon lemon juice ΒΌ cup chopped green onion Salt and freshly ground black pepper, to taste 10 crepes Heat oven to 350 degrees. Cook the broccoli in the microwave for 3 to 5 minutes until tender. Drain well. Combine broccoli and chicken in a large bowl and set aside. Combine cream of chicken soup, sour cream, lemon juice, green onion and salt and pepper in a bowl. Add half of the soup mixture to the broccoli and chicken. Divide the chicken filling among the 10 crepes, roll up and place in a glass baking sheet that has been sprayed with nonstick cooking spray. Spread with the remaining soup mixture and bake until bubbly, 20 to 25 minutes. Makes 10 crepes.
