When I was a child, this is what my mother would make for dinner when we fell on hard times. To me and my sister, it might as well have been filet mignon. Maybe it is an acquired taste, but I still eat it today. I don’t know who came up with the name but that is what we still call it. I guess another fitting name could be poor man’s rice. Make the rice, according to directions on box/bag. Stir in Cream of Mushroom Soup. Add salt and pepper as you like. Yep, that is it. Easy, affordable and good…I hope! If you desire a thinner consistency, you can add milk.
