Does anyone have a good homemade beef soup recipe?
This is one of my favorite Thai Beef Noodle recipes. I even make this without the noodles and it’s still good. Thai Beef Soup with Coconut, Lemongrass, and Noodles Serves 4 For Beef: 1 lb skirt steak, cut across the grain into pieces 1 inch long and 1/8 inch thick. 2 T soy sauce 2 T toasted sesame oil For Soup Base: 3 cans (14 ounces each) coconut milk 3 stlk lemongrass, tough outer leaves removed 3 T minced ginger 3 kaffir lime leaves, or 1 teaspoon lemon zest 1 stlk celery, diced (about 1/2 cup) 1/4 c freshly squeezed lemon juice 2 t minced garlic 1/4 c minced cilantro 1 c dry white wine For Vegetables and Noodles: 3 Roma tomatoes 1 T olive oil 1 sweet onion, finely diced 3 scallions, finely sliced 1 carrot, finely sliced 5 oz dry rice noodles (or jasmine rice noodles) 1/2 c finely sliced basil TO PREPARE BEEF: Place the beef in a mixing bowl, add the soy and sesame oil, and let marinate at room temperature for 2 to 3 hours, or at least 30 minutes, turning occasionally.
