Peel one medium size russet potato per serving of mashed potatoes. Rinse the potatoes off quickly in cold water; cut them into quarters and place in a pot. Cover the potatoes with water and add a teaspoon of salt to the water. Place the lid on the pot and place it on the stove burner on “high” heat. Once the potatoes boil, allow them to continue until you can pierce the potatoes with a fork and it breaks. You don’t want to over-boil them and have the potatoes fall apart in the pot.Drain the potatoes in a colander in your sink and then place back in the pot. Add a 1/4 cup of butter and a 1/2 cup of milk or cream for each six potatoes you cook. Mash with a hand masher, or place in a mixer, until light and fluffy. Add salt and pepper to taste. If you find that your potatoes are dry while mashing, add a little more milk until they are a consistency you like.
