Well for a start it’s got nothing to do with caffeine as the amount in chocolate is minuscule compared to say coffee. What makes it “addictive” is the taste and mouth feel from the cocoa butter and the cocoa solids. The solids contain certain alkaloids which have been linked to serotonin levels in the brain. Chocolate will become very expensive soon because the price of sugar and cocoa has gone through the roof. Manufacturers have started to use cocoa butter substitutes (much cheaper) and you will notice the flavour and texture deteriorating. White chocolate is not really chocolate which is ironic because that’s my favourite…followed by milk chocolate.
