How Do You Make Italian Escarole Soup?
My mother makes our Sicilian Italian Family Escarole soup as a part of our Thanksgiving Day and Christmas Day dinner’s. We sprinkle Parmesan Cheese on it and it tastes so very delicious. In a large pot, heat one tablespoon oil over medium-high heat. Add one onion (chopped), add four pieces of garlic (garlic teeth) chopped, add 1/2 teaspoon of salt and 1/4 teaspoon pepper; cook and stir continually until onion is tender – approximately two to three minutes. Add prepared cocktail-size meatballs; cook and stir occasionally, until meatballs are browned about three to four minutes. Add two cans of chicken broth and two cups of water and stir. Add 1/2 cup small pasta shells and cook until tender for approximately ten minutes. Stir in one head of Escarole – broken up or three cups of baby Spinach. Stir. Cook until heated through, approximately one to two minutes. Serve hot soup with grated Parmesan cheese sprinkled on top. Serve soup with fresh Italian bread slightly warm, heated from the ove
