Vanilla pastry cream, or crme ptissire, is a classic French recipe that’s used in dessert and pastries like profiteroles, cream puffs, clairs and many more. Pastry Cream is basically a form of custard sauce – cream, eggs and sugar. Custard of course is the perfect accompaniment to many a British pudding but it’s the addition of starch (usually flour, corn starch or a mixture of both) that makes a custard into a pastry cream.
