How Do You Make Baked Potato Soup?
I have to say this is the BEST baked potato soup recipe I have. It is a family favorite and easy to make. Try it and you won’t be disappointed. Dice the unpeeled red potatoes into small cubes. Place in a large pot and cover with water and bring to a boil. Let the potatoes boil for 10 minutes or until almost cooked through. In a separate pot, combine the melted margarine and flour, mixing until smooth. Place over low heat and gradually add half and half, stirring constantly. Continue to stir until smooth and liquid begins to thicken. Add velveeta cheese cutting it into pieces. Stir well until melted. Drain potatoes and add to cream mixture. Stir in pepper, garlic powder and hot pepper sauce. Cover and cook over low heat for about 30 minutes, stirring occasionally. Place soup into individual serving bowls and top with crumbled bacon and shredded cheese. Enjoy!
