How Do You Make Spaghetti Alla Carbonara?
Here’s another wonderful pasta recipe I learned during my years living in Italy. I guess it was so long ago it would now qualify as an ‘old-fashioned’ recipe! Yet, if you can handle the calories, it remains one of the tastiest recipes for pasta I’ve ever had. (Okay. Maybe I’m a bit prejudiced!) I hope you enjoy it! As you can see, the portions are not exact so you can play around with what you like best. This should serve about 6 people. While cooking the pasta, fry the panchetta in the oil until soft. In a separate bowl mix the eggs, salt, pepper, grated parmesan cheese and cream. Drain the spaghetti. While the pasta is hot, mix in the butter. Immediately pour in the egg mixture over the top. Then toss in the hot panchetta with the rendered oil. The heat will cook the egg mixture lightly. Mix it all through the spaghetti. Serve piping hot. I’m sure this is dreadfully fattening, but is sure tastes terrific! Enjoy!
