How Do You Make Cinnamon Rock Candy?
This candy has a wonderful cinnamon flavor. It makes a great breath freshener because cinnamon is anti-microbial. It also provides a nice “pick me up” for the 3 o’clock blahs because cinnamon boosts brain activity. I make this candy every year at Christmas. It is a family favorite. One batch makes about 2 lbs., plenty to keep some for yourself and to give as gifts. It also makes a great Valentines Day gift. Line a cookie sheet with foil and butter the foil; set aside. I do this by pulling back the wrapper on a stick of butter and then smear it onto the foil. In a large heavy saucepan over medium heat, combine water, sugar, corn syrup and food coloring. Bring mixture to a boil, stirring occasionally. Cover with lid and cook for 3 minutes to dissolve the sugar. Uncover; attach candy thermometer to side of pot. Make sure the end is not touching the bottom of the pot. Cook on medium-high heat, without stirring, until the candy thermometer reaches 300 degrees, about 25 minutes. Remove pot f
