My naan recipe has both milk and yogurt in it, and the recipe calls for brushing the top with melted butter (which I don’t do). Milk and yogurt give a very tender crumb and a nice tang to the bread. I’ve seen naan recipes that don’t contain milk, too, though. The only way you’ll be able to know is to ask–and if they’re not making it from scratch at the restaurant (I’ve seen naan mixes recently, for example, and in a big metropolitan area, they may be buying from a bakery), you may have a hard time getting an answer–especially if you’re talking to someone with a less-than-perfect grasp of English. Lots of milk products–a surprising amount, actually–are used in indian cuisine in general.
