MMMMM! I LOVE cornbread! I actually made some recently, to go with some homemade chili. When I took out the cornmeal, I realized I didn’t have the recipe from the package (I keep my dry ingredients in rubbermaid-type canisters to keep the bugs away), so I had to go rummage thru my cookbooks. This is from the Good Housekeeping Illustrated Cookbook: 1 cup all-purpose flour 3/4 cup cornmeal 2 to 4 tablespoons sugar 1 tablespoon baking powder 1 teaspoon salt 1 egg 2/3 cup milk 1/3 cup butter or margarine, melted, or salad oil 1) Preheat oven to 425*F. Grease 8’x8′ baking pan.In medium bowl, mix together flour, cornmeal, sugar, baking powder, and salt. 2) In small bowl, beat together egg, milk, and butter/margarine and pour into flour mixture. 3) Stir just until flour is moistened and pour batter into baking pan. 4) Spread batter evenly and bake 25 minutes or until golden.
