How Do You Make Braised Beef Short Ribs?
Braising is a cooking method where you first sear your protein before adding liquid for a long, slow simmer. Braising works well to tenderize tough cuts of meat. This recipe uses beef short ribs. Add 1 TB oil to a cast iron pan or dutch oven and preheat over high heat for 5 minutes. Sear the short ribs 5-10 minutes on each side until a nice brown crust develops. Remove to a plate and rest. Add the garlic, onion, tomato paste and spices to the hot pan. Saute until onions are translucent. Add your liquid to the pan. Both red wine and beef broth work really well. Stir. Return short ribs to pan and make sure short ribs are nearly covered in the liquid. Add a cup of water if necessary. Cover the pot, reduce heat to low and simmer at least 3 hours or until fork tender. Serve with potatoes and use strained braising liquid to make a gravy.
