You know that purple stuff you find in salads at restaurants? Well, how about trying an entire salad made just of that? It’s called red cabbage and it’s very tasty and quite edible just as it is. It’s one of my husbands favorite salads to make and eat as an accompaniment to meals. It’s delicious, healthy and it burns calories just by eating and digesting it. Take off the outer leaves off the red cabbage head. These tend to be dry and discolored. Plus, the inner leaves will tend to be cleaner since only the outer leaves have been handled. Cut a large chunk off the head of the red cabbage and lay flat side down on cutting board. With your knife, start cutting the cabbage into very fine shreds. Try and get it where it’s almost shaved. Fill a bowl with the amount you desire, depending on how many portions you’ll need. Drizzle a small amount of extra virgin olive oil over the red cabbage and toss with two forks.
