Hi, ^^ The simple reason about our spicy dishes is the Thai chilli. In the old time, Thais always cooked with the home-grown vegetables and the chilli was the one of them that easy for growth in the weather of Thailand (especially bird-chilli-so spicy!!!!).And some kind of super duper spicy chilli can be grown only in Thailand. Besides, most of the Thai dishes are spicy not only because of the chilli but also the other ingredients such as ginger, garlic, lime or galangal like in tom-yum paste (the spicy soup) which has the strongly taste because of them. I answered by my experience because I’m a Thai and I hope that helps.
