Bake potatoes until cooked through. Cut the potatoes in half lengthwise, scoop of most of the potato, leaving about 1/4 inch of potato on the skin, forming a boat. Sprinkle with toppings such as cheese and cooked crumbled bacon, then broil for about 4 minutes until cheese is melted and serve.
