This sweet, spicy, salty Asian dipping sauce is delicious and goes great with grilled chicken, sate, cold soba noodles, stir fry or most of your favorite Asian dishes. In a medium sized serving bowl combine the following: 1/4 cup peanut butter, two tablespoons soy sauce, one tablespoon rice vinegar, two teaspoons sesame oil, one tablespoon hot chili sauce or paste (more or less depending on how spicy you like it) Whisk ingredients together thoroughly. If peanut sauce is too thick, add a few tablespoons of water or additional sesame oil until you reach desired thickness and consistency. You can also add all ingredients to a food processor to combine. Add a handful of chopped fresh cilantro, sliced green onions, a sprinkle of dried garlic and a squeeze of lime juice. Let peanut sauce stand for at least an hour to allow ingredients to marry. If you want extra hotness, add dried red chili flakes to the sauce.
