How to Make Goat Cheese at Home
You will need goat milk, lemons, kosher salt and cheese cloth. Heat the milk in a stainless steel pot at least 185 degrees. Allow to simmer, watching carefully to avoid boiling or burning. Remove the milk from the heat and allow to sit. Add lemon. Line a colander with several layers of cheesecloth. Ladle curds into a strainer. Allow curds to cool. Press curds into the bowl to make a block or write in cheesecloth. Place in the refrigerator for at least 2 days.
