If you are redoing the entire shower, install wall sheetrock before installing the new shower pan. Also consider using Wonderboard, a waterproof sheetrock. Although more expensive, it will help prevent rotting and water damage. Apply mortar and mud to walls if you are redoing the entire shower. Once walls are dry, proceed to working on the floor. Apply cement mortar to floor. When applying the cement mortar, you will need to make a slope toward the drain at a rate of 1/4 inch per foot. If installing a whole new shower, tile the walls prior to tiling the floor. After walls are tiled and set, you can begin tiling the floor of the shower using thinset mortar.
