How Do You Make Pikelets?

Pikelets are a small version of pancakes, although they taste a little like a cross between pancakes and a crumpet. They’re usually a hit with the kids and they’re perfect for camping trips. • In a large mixing bowl, mix together the flour, sugar, egg, and milk. Continue mixing until a smooth batter is formed. Add the melted butter and stir in. • Heat a heavy-based frying pan. Add a dob of butter to the pan and tip it across the pan to cover the base. • Drop one tablespoon of batter into the pan. Cook the pikelet one side, until bubbles appear on the surface. Flip over gently and cook the other side until browned. The first pikelet is the “seasoning” pikelet and may not work but don’t worry as it has paved the way for the rest to work (and it’s still perfectly edible, good for chef’s munchies). • Drop tablespoons of mixture for each pikelet in the pan. Only add as many as will ensure that the pikelets are not touching. Cook in the same method as above. • Remove from the frying pan. Pla
