Step 1 Make sure your hands are clean and dry and wear an apron if you have one. Have all utensils, pots and ingredients ready for use. Mix above ingredients and form small balls. Saute until lightly brown in olive oil. Drain and set aside. Step 2 To large stock pot, add 4 cans chicken stock, 6 thickly sliced celery, 4 thickly sliced zuchinis, 1 onion sliced in quarters, 2 garlic cloves (whole) peeled, 4 chopped tomatoes, 1 can tomatoe sauce1 bay leave, 1 handful of cilantro sprigs. Step 3 Let these ingredients boil for 10 minutes; then add the meatballs and boil another 25 minutes. Season to taste and serve with corn or flour tortillas. You can even add cooked rice into the pot of soup and it will be even better.
