How Do You Make Massapequa Potato Salad?
This Massapequa Potato Salad has been a family favorite of mine for decades and every time we have a get together and even occasions outside of the family this dish is always a must have. It’s the perfect side dish for cookouts, Thanksgiving, Christmas, and even as a side for lunchtime sandwiches. Step 1 Bring a large pot of salted water to a boil. Step 2 Boil potatoes with skins on for 30 minutes or until tender. Step 3 While potatoes are cooking, finely chop onions and cover with 2 parts vinegar and two parts water. Step 4 Drain potatoes and allow to cool. Step 5 Peel and cube potatoes into medium to small sized pieces. Step 6 Drain and rinse onions and add to the potatoes. Step 7 Drain and add dill pickle cubes. Step 8 Mix mustard and mayonnaise together and add to the potatoes. Step 9 Season with salt and pepper to taste. Step 10 Mix until all ingredients are consistently covered. Step 11 Serve warm or chilled. However you prefer.
