Who invented carrot cake?
Carrots have been used in sweet cakes since the medieval period, during which time sweeteners were scarce and expensive, while carrots, which contain more sugar than any other vegetable with exception to sugar beets. Interesting side fact carrots at this time were not orange. They were black, red or even white. The western carrot emerged in the Netherlands in the 15th or 16th century, its orange color making it popular in those countries as an emblem of the House of Orange and the struggle for Dutch independence.
