There are five steps when you are drying figs. First you need to let the figs ripen by letting them fall from the tree. Harvest them quickly so they do not rot. Wash them and cut them in half. Put the figs, skin side down, on a drying rack. You can put them in the sun to dry but make sure it is a warm low humidity day. You can lay a cheesecloth over the figs so bugs don’t get on them. Pasteurize the figs so you can kill the insects. Put them in freezer bags and put them in the freezer for at least 4 or 5 days. You can also put them in the oven. If you choose the latter option then set the oven for 175 degrees for 10 to 15 min.
