The letters refer to the proper chord to play in that part of the song. They usually refer to the left hand and put them at the top of the sheet music to make it easier for people to change the song and make it there own…even when there’s already music written for the left hand. It can also be used when you’re playing in a band…it can tell you what chords the guitarist should play, for example. Yes, there are different ways to play a C chord (CEG, EGC, or GCE…any combination of the notes in that chord). Any one of those combinations will sound good when you play it there. The lower-case m’s mean “minor”. “Am” means A-minor. So think of the chord in the key of A-minor (A, C-major, and E) and play any combination of those 3 notes. If there’s no m, it’s automatically -major. I don’t remember the exact translation/definition of the 7, but I think it simply means to add the 7th note of the scale to the chord.
