How can mass just change to KE?
See above question: you can think of mass and kinetic energy as different forms of energy, that can change into each other in kind of the way that energy gets transformed from potential to kinetic energy in a gravitational or spring system. What specifically happens in a given situation, i.e. whether mass turns into kinetic energy or vice versa, depends on the nature of the interaction.
