You need to put your barbecue on a medium temperature, when you are roasting or baking. Always Preheat your barbeque by turning on all burners and closing the hood until the temperature reaches ‘hot’ on the heat indicator. (Note: always ignite the burners with hood is open.) We provide you with cast iron grill plate and cast iron hot plate. Place the food on the grill to barbeque. Apply oil to the grills and plate before you place the food on them. We provide you with a barbeque warming rack, you may use it if extra space is required. Ensure there is no direct heat given to the food. On a gas barbeque, turn off the burners below the food. On a charcoal barbeque, make sure the coals are on either side. It is good to maintain a medium temperature inside the hood. In a gas barbeque, turn the remaining burners to low to maintain medium temperature. Do not open the barbecue hood often, this will allow the heat to escape and the will increase the time in cooking.
