In Essentials of Fine Cooking, which The New York Times has dubbed the “boot-camp of cooking,” students get a full and thorough grounding in the fundamental competencies of Western cooking – everything from knife skills and stock-making to food preservation and kitchen ordering. In Pastry Techniques, students master the art of pastry-making, including cake and tart-making, cold and hot desserts, cookies, plated desserts, and petit fours.
