What Is Cuban Food Like?
Traditional Cuban cuisine is really multi-cultural. It contains influences of Spanish, French, African, Arabic, Chinese, and Portuguese cultures. Most of the food is sauteed or slow-cooked over a low flame. Very little is deep-fried and there are no really heavy or creamy sauces. Most dishes use sofrito as their basis. Providing the main Cuban flavor, sofrito is a sauteed mixture of seasonings and finely chopped vegetables, such as onions, garlic, and peppers. It is used when cooking black beans, stews, meat dishes, and their light, tomato-based sauces. The meats and fish are typically marinated in citrus juices, then roasted over low heat until the meat is tender. Dinners usually consist of a meat, chicken, or fish dish as the entree accompanied by white rice, black beans, and maduros (sweet fried plantains). What is Mambo Jambo Like?
