Canola is best IMO. The Melting Pot restaurants use canola, too. Do not use sterno and try to cook w/ oil. You need a hotter, steady heat source for frying. Fondue is a great way to entertain, one of my faves! All the work is in the prep… you just bring out plates of food and set out and let people get w/ cooking! That said, make it easy on yourself. 2 kinds of meat and 2 veggies are plenty. You dont’ have to have the variety the fondue restuarants do; it will work you to death! Parboil and quarter new potatoes so they fry quicker. Have plenty of dipping sauces, and a tempura batter for frying. Some of my fave recipes are below. TEMPURA BATTER 1/3 cup ice water 1/4 cup cornstarch 1 egg yolk 1/4 teaspoon salt 1/4 teaspoon white sugar 1 teaspoon shortening 1/2 teaspoon baking powder optional: 1 Tbsp. sesame seeds (for crunch) In a medium bowl, mix together all ingredients.
