What does goat taste like?
This is an interesting question to answer. Let me start with some historical reference. In 327BC, Alexander the great married 16 year old Roxane after defeating her father. At the wedding, roasted hind leg of baby goat was served. After Alexander defeated Porus, again the rosated hind legs of baby goat were served at the battle field when the peace treaty was celeberated. The best part of goat meat is the hind legs of baby goat (less than 9 months old). They are meaty with nice fat. The slowly cooked meat is tender, and not much gamey. In India it is called ‘Sikanderi Raan’. Sikanderi refers to Alexander the great, and Raan is the hind legs of a baby goat. Now let us move foreward to the time of Akbar the great. Akbar loved the Sirloin part of the baby goat. He called this cut of goat as the ‘Pasanda’. Pasand means choice. it was the ‘choice cut’.
