Toasted pumpkin seeds are both healthy and delicious. Not to mention, they are a great way to use the entire pumpkin.

You will need:

  • A pumpkin
  • Salt
  • Olive Oil
  • Seasoning salt or cayenne pepper (if you prefer a kick)

Preheat the oven to 300 degrees F. After you gut your pumpkin for your jack-o-lantern, take the filling and put it in a strainer in the sink. You want to remove all of the pumpkin innards so that you are left with seeds. Rinse off the seeds and dry them off. Spread them out on a greased cookie sheet.

Drizzle olive oil and salt over the top and toss with your hands. If you are interested in adding some flavor or spice, toss a few pinches of seasoning salt or cayenne pepper over the top and toss again. Bake for 45 minutes stirring every 15 minutes.

When they are nice and golden brown, they are done. Remove from the oven and let cool. Enjoy!
